What is the practical ceiling on guest count?

Throughput scales with cooking stations and attendants rather than a single hard number. Several hundred guests over a multi-hour window is routine; a thousand people inside 60 minutes is not, and we will tell you that instead of accepting the booking. Volume planning starts from the peak-hour count, not the total attendance.

Do school fundraisers and public events need permits?

Public events on city property, school campuses and park sites usually require the organizer to hold the event permit, and temporary food service at public events falls under Orange County Health Care Agency rules. Our food-facility permitting is maintained on our side; the site permit stays with the organizer. Share the venue requirements early so documentation is ready.

How is film and production crew catering handled?

Production work is quoted by call time and crew size rather than a fixed dinner window, with service held to the schedule the AD sets. Late pushes are normal on set, so a standby hour is usually built into the quote rather than billed as a surprise.

Can service run in shifts across a full day?
